Umm, today is National Trail Mix Day and although I know there are a ton of crazy food holidays randomly placed throughout the year, I can’t NOT celebrate today. Trail mix is one of my all-time favorite snacks and even inspired the name of this blog.

So yeah, we’re totally celebrating trail mix day. I hope you like it. 🙂

Even if you’re not a huge fan of food holidays, I KNOW you are going to love this trail mix blend because it’s basically a breakfast delight in trail mix form with maple and cinnamon, two of the best breakfast flavors on the planet, lots of crunchy nuts, toasted coconut and dried berries.

It’s addictive, as all trail mix tends to be, so just be sure to measure out your ¼- ⅓ cup portion or else you might eat the whole batch in one sitting. <— Just trust me on this one. I took one for the team.

I love to snack on trail mix as an afternoon snack, but this breakfast blend is perfect in the morning. I like to use it as a topping for yogurt or oats (like granola) or have it as a side with whatever else I’m having. It pairs perfectly with a cup of coffee or tea.

That said, you can also toss the trail mix in a container or plastic baggie and munch it on the way to work or the gym! It’s super portable and doesn’t create a bunch of crumbs so it’s the perfect car snack.

If you’re short on time or don’t want to worry with roasting the trail mix you can totally make a raw version,  toss the nuts, coconut and dried fruit together with the cinnamon and sea salt. Just skip the maple syrup and vanilla or else you’ll have a sticky mess on your hands. #whyamisticky

The perfect morning snack mix with with maple cinnamon roasted nuts, coconut flakes and dried berries.

Ingredients
  • ½ cup raw almonds
  • ½ cup raw cashews
  • ½ cup raw pistachios*
  • ½ cup unsweetened coconut flakes
  • 1 Tablespoon maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla
  • pinch of sea salt
  • ¼ cup dried berries
Instructions
  1. Preheat oven to 350°. Combine almonds, cashews, pistachios and coconut flakes in a mixing bowl with maple syrup, cinnamon, vanilla and sea salt. Toss to combine.
  2. Spread nut mixture on to a baking sheet, place in pre-heated oven and toast for about 10-12 minutes. Remove from oven and allow nuts to cool. Toss with dried berries and enjoy. Store leftover mix in a covered storage container for up to a week.
Notes
*If you can't find raw pistachios, you can use roasted. Just add them to the mix when you add the dried berries.
